10 eggs
1/2 c. heavy whipping cream

Sea salt and black pepper, to taste
1 medium red or green bell pepper, diced
2 scallions, sliced
1 c. cherry tomatoes, halved
2 c. fresh spinach, chopped
4 oz. feta cheese, crumbled
1/2 c. parmesan cheese, freshly grated
1/2 c. fresh basil, roughly chopped

Directions:

  1. Preheat oven to 400° F.
  2. Grease a large cast iron skillet or a baking dish with one tablespoon of olive oil. Set aside.
  3. In a large mixing bowl, whisk together eggs and heavy cream. Season with salt and pepper to taste.
  4. Spread the green pepper, scallions, spinach, and cherry tomatoes on the bottom of the prepared skillet, seasoning with salt and pepper to taste. Pour the egg mixture over the veggies.
  5. Top with feta and parmesan cheeses.
  6. Bake until the eggs are fully set and slightly browned around the edges, about 18-20 minutes.

Remove from the oven and let cool for 5 minutes before slicing. Serve topped with fresh basil. Enjoy!
